Simple Sourdough Bread Recipe

Sourdough is so incredibly delicious and it doesn’t have to be complicated.
This is the simple sourdough recipe I use for nearly everything. Having this one simple recipe on hand is great for sandwich bread, french loaves, pizza, rolls, and so much more.
This dough is also great because you can start it at breakfast and have fresh bread for dinner!
For same day bread, feed your starter before bed, I recommend adding equal parts flour and water (1 c starter needs 1 c flour and 1 c water).
Night before, feed the sourdough starter.


In the morning, mix the sourdough bread dough.

Knead the bread for 7-10 minutes until the dough pulls away from the sides and it passes the “window pane” test. Extra flour may be required depending on the hydration of your starter. Kneading the dough less (5-7 minutes) will give you a more dense and chewy bread.

Cover and rise 5-6 hours.

Shape the sourdough bread loaves and rise 1-2 hours

Simple Sourdough Bread
Equipment
- large bowl
- loaf pans or sheet pan
- kitchen scale
Ingredients
- 12 g sea salt 2 tsp
- 550 g warm water about 2 ½ c
- 350 g active sourdough starter about 1 ½ c
- 1050 g all purpose flour about 7 ½ c
Instructions
- In a large bowl or the bowl of a stand mixer, combine the water, salt, and sourdough starter.
- Add 4 cups of the flour and mix. Add the remaining flour 1 cup at a time until the dough separates from the side of the bowl and is slightly sticky. You may need to add a bit more flour depending on how hydrated your starter is.
- Allow the mixer to knead the dough for about 7 minutes, until smooth an elastic.
- Place dough in a large greased bowl, cover with a damp towel, and set it in a warm place to rise for 5-6 hours or until doubled.
- Shape dough into loaves and place them in lightly oiled (or parchment paper lined) loaf pans or on a sheet pan, cover with a damp towel and allow to rise for 1½-2 hours.
- Bake in 350℉ oven for 28 minutes or until it reaches an internal temperature of 180℉.
Notes
This simple sourdough bread recipe can be used for pizza, rolls, hoagies, hamburger buns, and hot dog buns.
Simple sourdough bread recipe will yield:
2 loaves of bread
2 large pizza crusts – pizza crusts do not require the second rise. They can be shaped and used after the first rise.
18-24 dinner rolls
12 hamburger buns
10-12 hoagie buns
12 hot dog buns
