Cooking homemade food doesn’t have to take all day. To make this recipe much faster and easier, I use store bought rotisserie chicken (this recipe uses roughly half of a chicken). You may choose to roast your own chicken or roast chicken breasts and thighs in the oven, but I do not suggest boiling the chicken breasts – so much more flavor comes from the roasting process.
When I buy a rotisserie chicken, I remove the meat immediately and either freeze the bones, or make broth if I’m planning to make soup. If you have the bones ready, you can start a simple pot of chicken broth on the stove to be ready when you make the soup, making this a much cheaper and healthier meal. This recipe for chicken broth is so easy to make!
This chicken noodle soup recipe is great with store bought noodles, but these homemade noodles take it to another level. They really are simple and I mix them up while the broth and vegetables cook in the soup.
How to Make Chicken Noodle Soup
Melt butter in dutch oven over medium heat. Add onions, carrots, and celery and cook until onions are translucent. Next, add garlic and cook an additional 30 seconds.

Then, add chicken broth and seasonings. Cook 20-25 minutes, until vegetables are soft.

Add pasta and chicken and cook until noodles are done (times may vary according to package instructions or homemade recipe instructions).
Add sherry and heavy cream and cook an additional 5 minutes.

Remove bay leaves and enjoy!

Homemade Chicken Noodle Soup

- 1 medium onion, diced
- 2 c carrots, sliced (about 4 large carrots)
- 1 c celery, sliced (about 2 stalks of celery)
- 3 cloves garlic, minced
- 2 qts chicken broth
- 3 bay leaves
- 2 tsp parsley, dried
- 1 tsp rosemary, dried
- 16 oz egg noodles homemade or store bought
- 4 c chopped rotisserie chicken*
- 1/3 c cooking sherry
- 3/4 c heavy cream
- salt and pepper to taste
Instructions
