This quick and easy slow cooker chicken pasta is not only delicious, but easy to switch up the flavors. Most days, we like to season it with homemade ranch seasoning mix, and other times, we use a homemade Italian seasoning mix. I know that making your own mixes at home are not everyone’s cup of tea, and the packets of ranch dressing mix or Italian dressing mix work just fine. I used to use the packets, but the Italian dressing mix was so incredibly expensive for what it was that I can now make it for pennies, instead of paying $2-3 per packet!

Ingredients

Boneless chicken breasts

Cream of chicken soup canned or homemade cream of chicken soup

Chicken broth or homemade chicken broth

Ranch or Italian dressing mix (dry)

Cream cheese

Milk (optional) – substitute 1 cup milk for 1 cup broth, but add later when pasta is added. This makes it a bit creamier.

Penne pasta you can substitute any larger pasta like rigatoni, but smaller pastas like macaroni will become too soft and fall apart.

Equipment

  • 1 Slow cooker
  • measuring cups
  • measuring spoons

Ingredients
  

  • lb boneless chicken breast (or thighs)
  • 2 cans cream of chicken soup or homemade cream soup
  • 4 oz cream cheese (1/2 block)
  • 2 tbsp ranch dressing mix (or 1 packet)
  • 6 c chicken broth
  • 16 oz penne pasta

Instructions
 

  • In a slow cooker, combine chicken, cream soup, cream cheese, dressing mix, and chicken broth. Cook on high 2-3 hours or on low 4-5 hours until chicken is cooked.
  • Whisk until cream cheese is incorporated and chicken is broken up.
  • Add pasta and cook on high for 45 more minutes, stirring every 15 minutes to make sure pasta cooks evenly. Serve and enjoy!
