Egg Noodles Recipe

Homemade egg noodles bring wonderful texture to home cooked meals. They are my favorite addition to homemade chicken noodle soup.
Making egg noodles might seem intimidating, but it is very simple and comes together quickly with only 4 simple ingredients.

How to Make Homemade Egg Noodles
In a large mixing bowl, combine flour and salt. Whisk together with a fork.

Make a well in the middle of the flour and add the eggs. Mix the eggs into the flour. It will look rough, and that’s just fine.

Add the milk and knead the dough for 5 minutes until rough and slightly sticky. Add additional flour if the dough is too sticky. As you knead it will become less sticky, but if you accidentally add too much flour, add just a bit of water to your hands as you knead.

Allow the dough to rest for 10 minutes.

On a well floured surface, roll the dough out to between 1/4 and 1/8″ thick.

Cut the egg noodles into 1/2″ wide, add to your soup, and cook for 5 minutes. If you are using them in a pasta dish, add to boiling water for 5 minutes, strain and enjoy!


How to Store Homemade Egg Noodles
If you make this pasta ahead of time, or make a large batch, these egg noodles freeze well. You can freeze the dough before rolling them out or roll out the noodles and freeze them. To use the frozen pasta, cook them from frozen and add them to your recipe.

- 2 large eggs
- 1/3 c milk
Instructions

- Make a well in the middle of the flour and add the eggs. Mix the eggs into the flour.
- Add the milk and knead the dough for 5 minutes until rough and slightly sticky. Add additional flour if the dough is too sticky.
- Allow the dough to rest for 10 minutes.
- On a well floured surface, roll the dough out to between 1/4 and 1/8" thick.
- Cut into 1/2" wide strips, then into 4" lengths and cook for 5 minutes. Enjoy!
