Sourdough Breadcrumbs

Sourdough breadcrumbs are a great way to use up any older bread in your kitchen. Making sourdough breadcrumbs from older loaves reduces kitchen waste and puts those delicious loaves to work in other wonderful recipes

There are days loaves might rise too much, too little, or simply don’t get eaten and there is no need to waste great bread. Turning these loaves into breadcrumbs, they can be enjoyed in recipes like salmon patties, Salisbury steaks, meatloaf, casserole toppings, soup and stew thickeners, and breading for meat cutlets.

Equipment

Although this is relatively simple, having the right equipment makes it much easier. I do recommend you have these tools:

  • Bread knife – a good sharp bread knife makes cubing the bread much easier.
  • Sheet pans – allow more room for the breadcrumbs to fully dry in the oven.
  • Food processor or blender – to pulverize the bread cubes into bread crumbs. (I’ve tried crushing them in other ways and it only make an enormous mess)

How to Make Sourdough Breadcrumbs

Really, you can make breadcrumbs out of any leftover bread, but we primarily eat sourdough, so that’s what we use.

It is important to fully dry the bread so that it will crumble instead of smashing together. I cube the bread and bake it on a sheet pan in the oven at 300℉ for 30 minutes.

After the bread cubes cool, place them in a food processor or blender and process until it reached the desired consistency. Store in an airtight container.

If you want to season your bread crumbs, do it after they are processed (don’t bake the seasoning). I like the versatility of plain breadcrumbs, so I leave them out.

Ingredients
  

  • Sourdough bread, cubed

Instructions
 

  • Preheat oven to 300℉
  • Cube or tear old bread into small pieces and place on a baking sheet.
  • Bake for 15-20 minutes, until bread cubes are crispy throughout.
  • Allow the bread cubes to cool for 5-10 minutes.
  • Once cooled, process bread cubes in the food processor or blender, pulsing until you reach the desired consistency.
  • Pour breadcrumbs into an airtight jar and use within 1-2 months.
