Sourdough Dinner Rolls
These dinner rolls are fluffy, lightly sweet and ready the same day.

- 1 c sourdough starter just past peak will give fluffier rolls than actively bubbly
- 8 c all purpose flour
- 2 c milk warmed
- 2 large eggs
- ⅓ c sugar
- 4 tbsp unsalted butter, softened
- 2 tsp sea salt
Add starter, sugar, milk, butter, salt, and eggs to a large mixing bowl or the bowl of a stand mixer. Stir to combine.
Mix in 6 cups of flour. Continue to add flour 1/2 cup at a time until the dough pulls away from the sides of the bowl and you have a slightly sticky, soft dough - you may not use all of the flour.
Knead dough for 5-7 minutes and cover with a towel.
Place in a warm spot and allow the dough to rest until nearly doubled in size (roughly 4-5 hours depending on how warm it is in the room).
Shape dough into 1½-2" balls and place on a sheet pan. Cover with a towel and allow 1-2 hours to rise.
Preheat oven to 350℉.
Bake 15-17 minutes or until golden brown on top. (internal temperature should be 200℉)
